Forget Waffles, Hello Chaffles!

Waffles for less than 1 Net Carb? WHAT THE HECK?!

Just call me Leslie Knope.

Not only is Parks and Recreation probably my favorite show of all time (it’s what’s holding me together through quarantine), but it is a constant reminder that waffles, meat, and whiskey are where it’s at...even on Keto!

Leslie’s favorite food is waffles with whipped cream, and I’ve been making various types of #chaffles lately to great success!

You do not have to give up waffles just because you live a keto lifestyle! Take it from Leslie herself!

I’m quarantined with my whole family, and everyone is cha-FULL of approval for these keto waffle substitutes! (Leslie and I also share a wonderful 😅 sense of humor)!

Recipe is found below!

Remember, #keto can be a lifestyle easily! These chaffles can function as waffles, sandwich bread, cake layers, so many things! Keto is what you make of it!

Each Chaffle is less than 1 Net carb! What a macro bargain!!!


Yields 3-4 mini waffles


  • Mug

  • Waffle Maker

  • 1 Egg

  • 1 Heathy Handful of Monterrey Jack (roughly 2 oz)

  • 1 Pinch or 1/2 tsp of Baking Powder

  • 1 Pinch or 1 tsp of Coconut Flour

  • 1 tsp of water

  1. Add all ingredients and mix. (It should look like chunky, wet cheese. It does not look like batter. Trust the process.)

  2. Add to waffle maker and cook


  1. Replace half the Monterey jack with cream cheese for a lighter fluffier more pancake like texture.

  2. Add cinnamon, vanilla, and sweetener of your choice to make it a sweet waffle, or to use as a cake base. You can build a cake with layer of waffles and icing. Yum!

  3. Add scallions, onion, bacon, or garlic to make it a savory waffle for sandwiches or as a base for other items.
